SAL VERDE is Grupo Azotea’s latest restaurant project, blending golf and gastronomy with views of Gibraltar and boasting two separate spaces: Sal Verde Arena Bar (situated in Alcaidesa’s beach with breath-taking views of the Rock of Gibraltar), and Sal Verde Casa Club, both a restaurant and an exclusive space for hosting events on the golf course.
Grupo Azotea’s young Executive Chef Manuel Berganza is the mind behind Sal Verde’s cuisine. Not to mention the fact that he’s known as the youngest Spanish chef to win a Michelin star outside of Spain – thanks to his Andanada 141 project in New York City, a fun, Manhattan-based
tapas concept that got him his first, long-pursued Michelin star in 2014. For the past years, he’s been in charge of the gastronomic side of all of Grupo Azotea’s restaurants in Madrid (La Azotea del Círculo de Bellas Artes, Picalagartos Sky Bar & Restaurant y Azotea Forus Barceló), El Cuartel del Mar, the versatile restaurant that opened last summer in Chiclana de la Frontera by the Atlantic Ocean, as well as Grupo Azotea’s latest opening this summer, Justa Rufina Taste & Sky, a restaurant with a terrace and a wonderful rooftop in Seville, in the new Radisson Collection Hotel Magdalena Plaza).
And now, for SAL VERDE, Berganza has designed a menu based on prime-quality ingredients and boasting a Mediterranean essence with a touch of creativity. Sophistication and casualness perfectly combine and give life to an unforgettable dining experience. We highly recommend the Monkfish with boulangère potatoes, broccolini and bilbaína sauce, the Retinto beef tenderloin steak tartare with crispy potato millefeuille and the Roasted artichokes with Payoyo cheese.
Cocktails are also a pillar of our gastronomic project, especially at Arena Club, thanks to Luca Anastasio, head of Grupo Azotea’s bars and mixology, three-time winner of World Class Diageo Spain with more than eighteen years of experience that have turned him into one of the greatest world-renowned mixologists.
